We all need a little more.

I think that you can never have enough laughter in your life. I love a joke, a prank, or just any excuse to have a good laugh. At my job there is a guy who has one of the weirdest laughs I have ever heard. But he does it so much that you just can't help getting caught up in it. Here's a lady that caught the bug and couldn't get rid of it. Even in another language, you'll laugh too. Enjoy.

"To Be Old and Wise...

You Must First be Young and Stupid." That was the front and back of my favorite T-short ever. Now that I have a few years under my belt, I thought I was moving on to the older and wiser part. After this experience I learned that I have a way to go.

We (wife, son, me) made a sojourn to the mall in Cary for some shopping. Anyone who has been shopping with a 5 year old knows what an adventure that can be. Especially since we were going to shop for eyeglasses, underwear, and towels. Not the sort of things that really catches the attention of someone who has no attention span. As it turned out, the boy was SUPER well behaved for the whole trip. On our way to buy towels we passed something called "Super Jump". It is a small trampoline surrounded by a lift with a harness complete with stretchy band to facilitate a serious amount of bouncing. We promised that if he could make it through the last of our stops under control that he could go on "Super Jump". Well he was and he did.



Now the Paul Harvey tribute. We had to pick up the aforementioned eyeglasses on our way out of the mall. Since the boy continued to behave we decided that he had also earned a treat. So before we left we bought him two chocolate chip cookies and a Sprite. Well, we were about halfway to the Micropolis and sure enough from the backseat we hear a regurgitive sound. False alarm. We thought maybe he just ate his cookies too quickly. As if you couldn't see it coming, in about 5 minutes we heard the same noise again. This time with solid results. He had literally tossed his cookies. The wife performed the super-motherly feat of leaning over the front seat into the back to do as much cleanup as possible with the requisite glove compartment napkins and stray plastic bag in the car. The rest of the trip went fine. Only a one time event. After washing the car seat cover and shampooing the back seat all returned to normal. So we have now learned an important parenting lesson. One that has seemed very obvious to everyone that has heard the story. NO FOOD AFTER "Super Jump"! I guess we are still on the path to older and wiser.

20 YEARS?!?!?

It seems a strange anniversary to mark, but none the less it is an anniversary. This month makes 20 years that I have been employed in the food service business. As most of you may know, it's one of the craziest businesses around. You work when everyone else is not. You work holidays, nights, weekends, and when most people are sleeping. If you work in the wonderful position of management, you are obliged to a work week of no less than 55 hours. Sounds like a winner, no?

So why in the world would anybody keep working at such a profession? As I reflect on it all, I guess it's been the people. It sure hasn't been the trips to the emergency room for cuts and burns. Not cleaning things that haven't been cleaned in years in the middle of the night. Not even the fist fights and wrestling matches. It's gotta be the people. Here are a few of the most memorable to me. And since it's my blog, these are ACTUAL names of the guilty parties.

Tarsha Hyman... I blush even now thinking about the things that came out of her mouth. What an education for a 16 year old!

Al Babcok... Gave me the phrase when you just need the facts and not a bunch of excuses and details, "Just give me the baby, not the labor pains."

Eric Lynch... Who taught me how to gauge cook times by how much of your cigarette you've smoked.

Ed the dishwasher... Any question asked of Ed was answered by "Aaahhiite". (Alright)

Mike Padgett... Would actually wait for me to leave the kitchen so he could hide a single egg behind a shelf post on the floor in the darkest corner of the cooler. Then come find me to see if I thought that the cooler was clean. Of course I said yes, and I was wrong. Way to go, Mr. California.

Mike Laverty... One of the coolest managers that ever was.

Bobby Love... Not really his name, but nobody knew his real name. This guy took partying to a scary level. Never joined him, but from his stories I knew better than to be anywhere near him.

Ezequiel... Really nice guy. But for his day job he manually inseminated pigs. By night, salad maker. Yuck!

Donnie Rich... "What's happenin', Cool?!". Could drink more than anyone I've ever seen and never have a hangover. At work on time every day. In the morning, no less.

Raline Buie... The best work wife anyone could ask for. Heart of gold.

Chris the prep cook... Was so redneck the KKK refused him membership.

And the person who takes the #1 spot among all the people I have met working in the food business... My wife. Who's only guilty of loving me while I have been out and about working in this crazy business. She was smart and never got sucked into the food business. And she's the reason I have stayed as sane as possible through it all!

Coulda Done Better

We have satellite radio at work and so we have been subjected to the same 45 songs for the last week and a half now.  For some reason this one really caught my ear.  Good music, taken right from "Little Deuce Coupe", but don't you think that while Brian Wilson spent all that time lying in bed he could have come up with a better lyric than "Christmas comes this time each year"?

The Look...

...I don't know exactly how you would describe it, but it certainly was a look all it's own.  The company where I do contract work had announced some time ago that they were going to be doing a pretty serious cutting of it's workforce.  As it turns out, they cut about 10%.  They did all of them in one day.

All morning long, people were walking around with this look.  Like they wanted to do something, but thought it might be pointless.  Like they thought they should stay in one place, but couldn't concentrate long enough so they wandered around.  They thought they shouldn't wander, but did anyway.   When the cuts finally happened the looks started to change as people faced the consequences.  Whether they were leaving, staying or had wanted to leave and did not.  

I wonder... Does God perceive us in the same way I perceived these regular employees?  Do we seem to just be wandering around looking for the answer?  Are we hiding from the consequences of situations that we put ourselves in and don't want to face?  Our eternal destiny has already been determined.  We are just here f0r the blink of an eye.  Should we be putting so much focus and strain on ourselves for this life?  Certainly we have a responsibility to provide for ourselves and our families, but does what is that count toward our final destination in this life; our eternal life?

If we focus on the eternal and not so much on the here and now, here and now could be so much more pleasant.  And then God wouldn't perceive us as a bunch on people lost and without direction.  Our focus, regardless of our current circumstances, would be on Him and our final destination.

Wise Thoughts...

In our not-so-little-anymore country church the time is coming when new leaders are about to be confirmed and ones for the 2010 are going to be called on to begin their training.  To that end, one of my brothers passed on this bit of sage...

"As I was reading Chambers this morning, & then went back through Ephesian 1 again, I was stricken by how small my god (little "g") has been, & how meager my faith is in Him Who is the One & only true God of the universe. I struggle with whether we are able to see change within a community of people who are comfortable with a modern "lite" version of Christianity.

I need to remember & trust that He IS on the throne, & that He IS able to do exceedingly abundantly beyond all that I could ask of think."

Let's Get this Straight...

Okay, since I have started my new job I have cooked like I haven't cooked in a very long time.  That is to say a lot and quickly!  

It seems though, that people here in the Micropolis are not very informed about food.  Even the basic food that we serve there at the cafe.  

Today a lady asked for her eggs sunny side up cooked done.  I threw on two eggs and let them brown on the bottom.  When I brought them over to her she almost went "RainMan burned Eggo" on me.  She said, "I can't eat that!  The yolks aren't even cooked!"  After I calmed her down and explained that she had made a mistake in how she ordered her eggs I gave her the proper way to order what she wanted.  I think she was trying to look good in front of her people and only ended up looking foolish.  Nothing wrong with speaking plainly and within your knowledge base if it gets you the result you desire. 

And all you who still don't know...  A Western Omelet includes ham, green pepper, onion, and cheddar cheese.  You wouldn't believe how many different variations I have heard in the last two weeks.

"Under God"

Well election season is most certainly in high gear.  We have the old curmudgeon against the new change guy for president.  The state gubernatorial race is heating up between the established woman and that conservative guy from the town that does not recognize itself as a part of NC.  And we have Elizabeth Dole against Kay Hagan for the U.S. Senate.  

I got a piece of propaganda in the mail from the North Carolina Republican State Executive Committee.  They think Kay Hagan is a very bad person.   Allegedly she has visited with a group called the "Godless Americans Political Action Committee".  This horrible group, according to the propaganda I received from the NCRSEC, wants to take out "under God" from the Pledge of Allegiance.  

Me too.

You see the pledge was written by a Baptist minister, Francis Bellamy, way back in 1892.  His pledge, the original pledge, did not contain the phrase "under God".  This idea was started by the Knights of Columbus which is a Catholic fraternal organization that has as one of their founding principles, patriotism.  Is patriotism a bad idea?  Absolutely not.  

Here is where this starts to come full circle.  The Knights of Columbus started to petition the federal government in 1951 to add in the phrase and make it official.  Now who is a Political Action Committee?  After hearing a sermon by a Presbyterian minister President Eisenhower signed a bill, brought by two other men who heard the same sermon, on June 14, 1954.  

Here is Eisenhower's comment...  These words [“under God”] will remind Americans that despite our great physical strength we must remain humble. They will help us to keep constantly in our minds and hearts the spiritual and moral principles which alone give dignity to man, and upon which our way of life is founded.

Sounds good right?  Sure does, but should we need the federal government trying to influence our thoughts and moral principles?  Have we forgotten about Plymouth Rock?  Have you forgotten the construction paper pilgrim hat that we were forced to make and then wear to the cafeteria to eat the vilest form of Thanksgiving supper that a processed turkey can produce?  I think we have.  

These pilgrims put their lives on the line to escape the destination of the road that the Knights of Columbus started us down.  We do not need government to do anything but PROTECT our rights to freedom of worship and religion.  I can make up my own mind about the Almighty without the influence of the almighty U.S. government.

Think.  Then vote.

Life Change

Well this is a long time coming.   A lot of people have been in this with me and I have probably driven my wife half mad with all the different forms this has taken.  Well it's done and we are really happy about it.  Please celebrate with us as we make what we think is a great change for our family.

Chef,

This is to inform you that I am submitting my two weeks notice for the Executive Sous Chef position at Capital City Club.  My last day of employment will be October 16, 2008. 

I have chosen at this time to work for a company that contracts corporate dining.  Please know that much thought and prayer have gone into making this decision.  Not just by me, but by my family and close friends.  This move will allow me to spend more time with my family and to be involved with them on a more consistent basis.  It will also allow me to be available to my church without interference from my job.

I appreciate your willingness to work with me these past two years.  I hope that I have served the company well and have provided a building block on which the next Executive Sous Chef can continue to build.

I request that upon my leaving that I be formally separated from the company so that any owed compensation will be paid out in a timely manner.

A Public Letter

Dear Sir,

I know that you do not know who I am and for that matter I am not naive enough to think that you might actually read this.  To let you know who I am, I was the fellow behind you in line entering the parking deck on Wilmington St. downtown Raleigh this past Saturday.  

As I understand from the parking attendant, you were angry because your usual parking spot on the street was occupied and thought you should be able to park in the deck without paying the posted charge.  When you figured out that you would not be able to park there you proceeded to back up without looking back or heeding the shouts of the attendant.  I was in the car you bumped.  

I sat there sir, waiting for you to exit your vehicle.  You did not.  After you pulled forward, I sat there and waited for you to exit your vehicle to express any sort of concern or remorse for bumping into me.  You did not.  After the attendant told me that there was no damage, I waited for you to exit your vehicle.  You did not.  When I got out to inspect for possible damage I thought at this point you may actually get out of your car and have a short civil, but apologetic conversation with me.  You did not.

Instead you continued to sit there while the car behind me and I backed into oncoming traffic to allow you to exit the parking deck.  When you exited the parking deck area you did not wave or offer any sort of gesture to show any sort of remorse.

I have a hope for you sir.  That you are not, or in the future, charged with rearing any male children.  What you displayed was a complete lack of understanding of what it is to be a man.  A true man recognizes when he makes a mistake and takes ownership of it.  He takes responsibility for his actions and accepts the consequences.  He acts in a way as to demonstrate that he is able to lead and provide an example of high standards and accountability to those around him, and especially any male offspring.

I feel true sorrow for any of your male offspring that have you as an example.  They are being taught to cower and shrink from confrontation.  If they wrong someone, they have no frame of reference to use to resolve their conflicts.  Your progeny sir, will be weak and powerless just like you.

I will pray for you sir.  That you see that you need to step up and present the proper example to your male children, or at least to society at large.  We are counting on you sir to continue to lead in your own way the cause of responsible living and accountability for one's own actions that are so sadly lacking in our society today.

Love or Fear?

I got an email from my friend "CC" who meets with several men on a weekly basis with the intention of discipling them.  One of the men he meets with emailed him with a very interesting query.  He wanted to know what your motivation is after you accept Christ into your life, after losing the fear of eternal damnation.  I love his analogy here...

"Never pick a fight with a man who has nothing to loose.  He has no fear.  He is willing to go farther, risk more than you are.  He doesn't care if you leave him bleeding in the street to die.  He sees the fight as win/win despite the outcome."

As non-Christians he is exactly right.  We really have nothing to lose.  Since we really have no hope, we can go all out in the world.  As mature Christians I say he is exactly right.  We move into a realm of acceptance.  We no longer need to be driven by fear.  We have already won.  I refer back to my theory of "catch-up Christianity".  Just because we don't hit all our marks doesn't mean that we are under closer scrutiny.  We already have the promise of heaven.  

Then what is the motivation?  What keeps us on the straight and narrow?  Something that God put in us from the beginning.  Greed.  We want more.

23 And whatever you do, do it heartily, as to the Lord and not to men, 24 knowing that from the Lord you will receive the reward of the inheritance; for[a] you serve the Lord Christ.

I think that we start our walk without a whole lot of enlightenment.  As the Spirit reveals more and more to us, our motivation changes.  Don't get me wrong.  I really want to be a part of that "forever sing-along-in-the-sky".  What I believe happens along the way is that we go from serving out of fear, to serving for reward, to serving out of love.  

The best example I can come up with for serving out of love is changing diapers.  I will tell you that I do NOT change the diapers of children who are not mine.  Quite honestly, I don't know what they put in so I don't know what's coming out.  Those of you who have or have had children are familiar with the "Six Wipe Diaper".  What is your motivation for changing that one?  Is it fear?  Most certainly not.  What can that little thing do to you?  Nothing really if you take out all the cutesy surface answers.  What is your reward for changing it?  A less smelly baby?  You could just go in the other room.  Not to hear it cry?  You could go outside.  You serve completely out of love.  You have such a feeling of devotion, connection, and love with this precious child that you just do the deed.  

And your love continues.  As you raise your child you continue to clean up those messes.  Sure they change form but still you serve.  And here is the difference.  You are not committed to "child rearing", rather you are devoted to helping your child become the best person you hope they could be.  You are serving them out of love.  That's all the motivation you need.

And that's what I believe happens in our Christian life.  We go from fearing God around the time of our salvation, to doing the deeds we know will earn us favor with God and get us past St. Peter.  (As an aside, I believe there is a sign as soon as you enter the gates of heaven that says either "The Chicken or "The Egg".  I think even God can get tired of answering the same question over and over again.)  And lastly, we come to serve out of love.  Hopefully we reach a place in our walk that our relationship with Christ has become so near and dear to us that is all the motivation we need to continue with daily Christian life.

Braggin' on the Family

I don't know how common this is with other families, but with mine it is THE thing.  I'm talking about the "Q".  No, not that annoying guy from 'Star Trek, The Next Generation' who always seems to want to put the screws to Capt. Picard.  I'm talking about BBQ.  

With the Voelz's, BBQ is almost like the Holy Grail.  It seems that we are always going out of our way to find the newest (and that may also mean the oldest) spot.  No place is too far out of the way if the there is a semi-verifiable rumor that there is good pig.  I remember going to one place in Tennessee that was so far off the path I think if everyone in the place had been quiet (and it was packed) you might have heard that familiar sound of "Dueling Banjos".  

That said, when Dad retired a few years ago we all wondered what he would do with his time.  It surprised none of us that he took the BBQ judging class with the South Carolina BBQ Association.  http://www.scbarbeque.com/  Well that was a few years ago.  I am proud to report that the old man has made his way (and who would have doubted) all the way up the ladder to the esteemed rank of 'Master Judge'.
